Pretzel Dipping Mustard & Bacon Potato Salad

Potato salad is always perfect for summer cookouts, but the applewood smoked bacon combined with our Fischer & Wieser Pretzel Dipping Mustard, gives this one a zippy spark that’ll have everyone asking for seconds! It’s not the same-old, same-old, that’s for sure!

Prep Time: 30 minutes
Cook Time: 15 minutes

  • 7-8 large potatoes, peeled and halved
  • 3 hard boiled eggs, cooled and chopped
  • 1-1/2 to 2 cups Fischer & Wieser Pretzel Dipping Mustard
  • ½ to ¾ cups purple onion, chopped fine
  • 2 celery stalks, chopped fine\
  • 6 slices applewood smoked bacon, cooked until crisp, then crumbled
  • ½ teaspoon salt (optional)
  • freshly ground black pepper, to taste

Peel potatoes; cut into fourths. Place in large saucepan and cover to 1 inch above level of potatoes with water. Bring water to a boil; reduce heat and simmer until potatoes are tender, approximately 15 minutes. Drain potatoes; cool in ice water bath. Cut potatoes into bite-sized pieces. Place in large bowl. Add all other ingredients. Mix gently. Chill until ready to serve. Serves 8-10

Quick Baked Beans with Chipotle Chile Ketchup

Looking for the perfect side dish for your casual backyard cookout? Look no further. This one’s a winner—and so easy, using canned beans and our great subtly spicy Fischer & Wieser Chipotle Chile Ketchup.

Prep Time:  5 minutes
Cook Time:  30-45 minutes

2 (15-ounce) cans pork and beans
¾ cup Fischer & Wieser Chipotle Chile Ketchup
¼ cup light brown sugar
½ cup onion, chopped

Preheat oven to 350° F. Combine all ingredients in a 3 quart ovenproof casserole dish. Stir to blend well and break up any lumps of brown sugar. Place the casserole in the oven and bake for 30 to 45 minutes, or until bubbly and slightly thickened. Serve hot. Serves 4 to 6.

Grilled Veggies with Fischer & Wieser All Purpose Vegetable & Meat Marinade

Want mouth-watering veggies that EVERYONE will want to eat? Try these, marinated in Fischer & Wieser All Purpose Vegetable & Meat Marinade and you’ll solve the problem of convincing picky eaters to “Eat Their Vegetables!”

Prep Time:  Varies, according to vegetables chosen—approximately
20-40 minutes
Grill Time:  Varies, according to vegetables chosen—approximately
5-30 minutes

Whole carrots, peeled, thin, tapered ends removed
Baking potatoes, (skin on), cut lengthwise into ½ inch thick slices, or
tiny red new potatoes, cut in half
Eggplant (skin on), cut lengthwise into ½ inch thick slices
Sliced red or yellow onions
Bell peppers, seeds and veins removed, cut into fourths
Roma tomatoes, cut in half lengthwise
Small zucchini and yellow squash, halved lengthwise
Beets, peeled and sliced into ¼ inch thick slices
Green onions, whole, with roots and tender tops removed
Greens (bok choy, collards, mustard, kale, Swiss chard, romaine)
1-1/2 to 2 cups Fischer & Wieser All Purpose Vegetable & Meat Marinade

Select the vegetables you wish to grill and place them in a single layer in a baking pan. Pour a liberal amount of the Fischer & Wieser All Purpose Vegetable & Meat Marinade on the vegetables, turning them to coat all sides. Marinate for 1 hour at room temperature. Grill the vegetables on gas grill over medium heat. The different vegetables will take various lengths of time to grill. Carrots will take about 20 to 30 minutes, while the zucchini and yellow squash will take about 5 to 8 minutes. Grill just until the veggies are browned and caramelized, but not charred. Turn often, basting with the Fischer & Wieser All Purpose Vegetable & Meat Marinade left in the pan. Serve hot.

Seared Button Mushrooms with Spicy Garlic Steak & Grilling Sauce for Topping Steaks

Fischer & Wieser Spicy Garlic Steak & Grilling Sauce is made for sauteed mushrooms! Try this great accompaniment at your next cookout!

1/4 cup unsalted butter
12 ounces small whole button mushrooms
1/2 teaspoon freshly ground black pepper
1 cup Fischer & Wieser Spicy Garlic Steak & Grilling Sauce

Melt butter in heavy 12-inch skillet over medium-high heat. When butter is foaming hot, add mushrooms & black pepper. Cook, stirring often, until mushroom liquid has evaporated and only butter remains in the skillet, about 8-10 minutes. Stir in the Fischer & Wieser Spicy Garlic Steak & Grilling Sauce, blending well. Cook, stirring constantly, until sauce has thickened and mushrooms are lightly browned. Serve hot over grilled steaks. Serves 6-8

Roasted Blueberry Chipotle Salsa

Looking for just that perfect munchie to get your party off to the right start? Look no further. This quick, easy and absolutely delicious salsa will do the trick. Even better, you can make it a day ahead and store it in the refrigerator. Just pop it out when you’re ready and serve it alongside a basket of corn tortilla chips.

  • 2 cups canned mandarin orange segments, well drained and roughly chopped
  • 1 small red onion, finely chopped
  • 3/4 cup Fischer & Wieser Roasted Blueberry Chipotle Sauce
  • 1/3 cup freshly squeezed lime juice
  • 1/2 cup minced fresh basil
  • 1-1/2 teaspoons minced fresh ginger
  • 1 large jalapeno, seeds & veins removed, minced
  • Corn tortilla chips

Combine all ingredients except corn tortilla chips in a medium-sized bowl and stir to blend well. Refrigerate until ready to serve. Turn salsa out into a serving bowl and serve with corn tortilla chips.

Sweet Heat Spinach Salad

1-2 tablespoons plus 1/4 cup Extra Virgin Olive Oil
1 pound sliced mushrooms
1 red onion, sliced thinly
1/4 cup balsamic vinegar
1/4 cup Fischer & Wieser’s The Original Roasted Raspberry Chipotle Sauce®
4 cups fresh spinach leaves

Sauté mushrooms and onions in 1-2 tablespoons Extra Virgin Olive Oil until mushrooms are browned and onions begin to carmelize. Remove from heat and set aside to cool slightly. Mix together 1/4 cup Extra Virgin Olive Oil, balsamic vinegar, and Fischer & Wieser’s The Original Roasted Raspberry Chipotle  Sauce®, blending well. Add mushrooms and onions to spinach leaves in salad bowl; drizzle olive oil-vinegar-Raspberry Chipotle mixture over salad, tossing gently.  Serves 4

Mixed Green Salad with Chicken and Raspberries

If you’re looking for a great “different” salad that provides massive nutrition and taste, try this one! You’ll get rave reviews.

  • 2 fully cooked (grilled) chicken breasts, diced
  • 4 to 6 cups washed mixed salad green
  • 1 cup fresh raspberries, rinsed and drained
  • 1 small can Mandarin oranges
  • 1 small red onion, sliced into rings
  • 1/3 cup chopped walnuts or pecans
  • 1 cup diced dried apricots
  • 1 to 1-1/2 cup Fischer & Wieser The Original Roasted Raspberry Vinaigrette
  • 1/4 to 1/3 cup crumbled feta cheese
  • garlic croutons

Toss all ingredients together except Fischer & Wieser The Original Roasted Raspberry Vinaigrette. Divide mixture into 6 serving dishes. Drizzle with Fischer & Wieser The Original Roasted Raspberry Vinaigrette. Top with feta cheese and garlic croutons. Serves 6.

Jalapeno Peach Cornbread

Although any of our jams, jellies or preserves are good with this recipe, we like the Jalapeño Peach because it goes with so many of our southwest-themed recipes. It’s especially great with our Mexitalian Chiligetti!

Prep Time:  15 minutes
Cook Time:  20 minutes

Preheat oven to 400°. Place 1/2 teaspoon oil in each section of a 12-cup large muffin tin. Place dry ingredients in large mixing bowl; mix well. Add eggs and oil to dry mixture. Slowly add milk until mixture is not too thick, but not “runny.” Place 2-3 tablespoons mixture in each muffin section; make a well and add 1 tablespoon Fischer & Wieser Jalapeño Peach Preserves. Top off with 1-2 more tablespoons cornmeal mixture, sealing edges and completely covering preserves. Bake 20 minutes or until browned. 12 large muffins

Mexicalli Cheese Soup

Sometimes there’s just nothing better than a really good bowl of soup. But, let’s face it, soup takes a lot of preparation, which means time that most of us don’t have to spare. Fischer & Wieser has the solution with this quick and easy, but mighty tasty soup using Fischer & Wieser Chipotle & Corn Salsa.

Prep Time:  5 minutes
Cook Time:  20 minutes

  • 1 quart chicken broth
  • 2 teaspoons chile powder
  • 1 pound pasteurized process cheese, cut into 1-inch cubes
  • 1 (16-ounce) jar Fischer & Wieser Chipotle & Corn Salsa
  • salt to taste
  • 1-1/2 tablespoons cornstarch mixed with 2 tablespoons cold water
  • Minced cilantro as garnish

Combine chicken broth, chile powder and pasteurized process cheese in a heavy 6-quart soup pot over medium heat. Cook, stirring occasionally, until cheese has melted, about 15 minutes. Add the Fischer & Wieser Chipotle & Corn Salsa and bring to a boil. Add the cornstarch mixture and cook just until soup thickens slightly. Remove from heat and add salt to taste. Serve hot, garnished with minced cilantro. Serves 6 to 8 first courses.

Hint:  For a more hearty soup, add leftover cooked chicken or turkey cubes before adding cornstarch mixture and allow to heat through about 5 minutes.
