Pumpkin Pie Butter Empanadas

These are the easiest little treats your family will ever love! Great for every day breakfasts,  holiday brunches, afternoon teas, or after dinner desserts!

Prep Time:  15 minutes
Bake Time: 10-12 minutes

1 8-ounce can crescent rolls
1/3-1/2 cup Fischer & Wieser Pumpkin Pie Butter
1 can cream cheese frosting (optional)

Preheat oven to 400 degrees F. Open crescent rolls and separate triangles. Place 1 tablespoon Fischer & Wieser Pumpkin Pie Butter in center of each crescent roll. Fold over and press edges together. Place on cookie sheet and bake for 10-12 minutes, or until empanadas are golden brown. Remove from oven. Allow to cool. Frost if desired with cream cheese frosting. Serves 4

Huevos con Migas

When you’re searching your brain for a really good weekend breakfast or brunch dish, try this tasty scrambled egg and tortilla strip selection!

Prep Time:  10 minutes
Cook Time:  10 minutes

  • 3 corn tortillas, cut into small strips
  • 1/4 cup canola oil
  • 1 dozen eggs
  • 4 tablespoons sea salt
  • 1 poblano chile, roasted, peeled, seeded and chopped
  • 1 medium white onion, cut into 1/4-inch dice
  • 1 cup (8 ounces) shredded Asadero cheese
  • 1 to 1-1/2 cups Fischer & Wieser Gourmet Salsa Verde Ranchera

Heat canola oil in a heavy 12-inch skillet over medium heat. Fry the tortilla strips until they are light golden brown (3 to 4 minutes). Break eggs into a large bowl and whisk them with the sea salt. Add all remaining ingredients and stir to blend well. Pour the mixture into the skillet with the tortillas and scramble until eggs are set to desired consistency. Serve hot with Fischer & Wieser Gourmet Salsa Verde Ranchera. Serves 6

Peach Pecan Butter Muffins

These great muffins serve as a delicious breakfast treat, a yummy after school treat, or an accompaniment to a soup or salad meal!  Try doubling the recipe and fill the muffin cups just to the top edge for a fantastic extra-generously-sized deli style muffin. And add extra peaches too, if you like!

Prep Time:  15-20 minutes
Bake Time:  20-25 minutes

Muffins:

  • 1-1/2 cups all purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted
  • 1/4 cup milk
  • 1 egg
  • 1 medium peach, peeled, diced (about 1/2 cup diced)
  • 1/3 cup Fischer & Wieser  Peach Pecan Butter

Topping:

  • 1/2 cup chopped pecans
  • 1/3 cup brown sugar, packed
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 tablespoons melted butter

Preheat oven to 400° F. Grease and flour 12 muffin cups or line with paper muffin liners. Combine topping ingredients until mixture is crumbly; set aside. Combine flour, sugar, baking powder, cinnamon, and salt in large bowl. Whisk together butter, milk and egg in separate bowl. Stir milk-egg mixture into the flour; mixture and blend just until moistened. Fold into diced peaches and Fischer & Wieser Peach Pecan Butter. Spoon into muffin cups; sprinkle evenly with topping mixture. Bake 20-25 minutes, or until a wooden pick inserted in center comes out clean. Remove from pan. Makes 12 muffins.

Raspberry Chipotle Turnovers

This is a quick treat that will win you accolades, whether you serve it for breakfast, as an appetizer before lunch or dinner, or as a snack or party treat! These can be made ahead and frozen to serve when those unexpected special guests arrive.

Prep Time:  15-20 minutes
Bake Time:  10-12 minutes

2 packages pie crust mix
1 3-ounce package cream cheese, softened
1 tablespoon milk
1/4 – 1/3 cup Fischer & Wieser The Original Roasted Raspberry Chipotle Jam
Cream Cheese Frosting, (see below)

Blend pie crust mix, cream cheese and milk. Divide dough in half; roll each into a 10 inch square (if desired, use canned Crescent Roll Dough and omit cream cheese). With pastry wheel, cut each square into 16 2-1/2 inch squares. Place 1/2 teaspoon Fischer & Wieser The Original Roasted Raspberry Chipotle Jam in center of each square. Pinch two opposite (diagonally) corners together and seal edges. Place on greased cookie sheet. Bake at 350 degrees for 10-12 minutes, or until golden brown. Remove immediately to rack.

Frost with cream cheese frosting, and serve with extra Fischer & Wieser The Original Roasted Raspberry Chipotle Jam if desired.

Frosting:

  • 1 cup confectioners’ sugar
  • 1 3-ounce block cream cheese, softened
  • 2-3 tablespoons milk

Place all ingredients in medium mixing bowl; mix together with electric mixer; drizzle over turnovers.

Makes approximately 32 turnovers

Sweet Onion and Garlic Marmalade Egg Squares

For a simple but fantastic brunch entrée, try these tasty egg squares! You’ll have everyone clamoring for this recipe!

Prep Time:  10 minutes
Bake Time:  40 minutes

  • 8 ounces Monterey Jack cheese, grated
  • 8 ounces cheddar cheese, grated
  • 10 eggs lightly beaten
  • 1 (12 ounce) can evaporated milk
  • 1/2 cup Fischer & Wieser Sweet Onion & Garlic Marmalade
  • 1-1/2 cups chopped green onions
  • 1 (4 ounce) can sliced black olives, drained
  • *see below for additional items that may be added

Preheat oven to 350° F. In a large bowl combine the cheeses, eggs, milk and Fischer & Wieser Sweet Onion & Garlic Marmalade . Line an 18″x13″ sheet pan with green onions and black olives. Pour the cheese mixture over the green onions and black olives and bake for 40 minutes. Cool pan for 10 minutes before cutting into small squares. Serve warm or at room temperature. Serves 8-10

*May add crumbled bacon, cooked ground sausage, diced ham or turkey, as desired; may also pour into mini-tart shells and bake for a crusted presentation
