Chicken Chili with Southwestern Chili Starter

Easy and delicious! Just sauté diced chicken breasts and pour our Southwestern Chili Starter over it and let the slow-cooker do the rest!

Prep Time: 10 minutes
Cook Time 2-8 hours

  • Cooking Spray
  • 3 boneless, skinless chicken breasts, trimmed of fat & cartilage, then diced (or 2-1/2 cups diced cooked chicken)
  • 2-1/2 cups Southwestern Chili Starter

Spray sauté pan with cooking spray. Add diced chicken breasts; sauté over medium heat until slightly browned. Add to slow cooker. Pour Southwestern Chili Starter over diced sautéed breasts. Set slow cooker on low and cook 6-8 hours, or on high and cook 2-3 hours. Serves 6.

Ranch Hand Chicken Casserole with Southwestern Chili Starter

Easy to prepare and even quicker to disappear, this casserole is so versatile you can use your leftover meats if you like and call it “New!” Call the guys in to eat in about an hour from start to finish.

Prep: 20 minutes
Bake: 40 minutes

  • Cooking Spray
  • 1/2 can (5-1/3 oz.) condensed cream of mushroom soup
  • 1/2 can (5-1/3 oz.) condensed cream of chicken soup
  • 1 jar (20 oz.) Southwestern Chili Starter
  • 2 cups cubed pre-cooked chicken
  • 2-3 cups crushed tortilla chips
  • 2-1/3 cups shredded cheddar cheese

Preheat oven to 325 degrees F. In a large saucepan, heat soups, Southwestern Chili Starter and chicken, stirring until well blended. Spray 13 x 9 x 2-inch casserole with cooking spray. Alternately layer soup & meat mixture, crushed tortilla chips, and cheese, repeating for three layers, reserving last 1/3 cup of cheese. Bake 30 minutes or until hot and bubbly; add final 1/3 cup of cheese and bake 10 more minutes, until cheese topping is melted. Serves 8

Crock-Pot Chicken Tacos

For a delicious way to serve your guests at any tail-gate or other party, these chicken tacos are not only easy, they’re SCRUMPTIOUS!

  • 6 boneless skinless chicken breasts (can be frozen)
  • 2 cups Fischer & Wieser Chipotle & Corn Salsa*
  • 1 package taco seasoning, mild or hot—your choice
  • 12 corn or flour tortillas
  • Garnish: Guacamole, sour cream, shredded cheese, shredded lettuce

Place chicken breasts in crock pot. Mix Fischer & Wieser Chipotle & Corn Salsa with taco seasoning. Stir until well blended. Pour over chicken breasts in crock pot, coating completely. Set crock pot to low and cook 6 hours, or high and cook 3 hours. When done, shred chicken. Warm tortillas and set everything out on buffet or table; allow guests to prepare tacos as they like. Serve with additional Fischer & Wieser Chipotle & Corn Salsa. Serves 6

*May use any of our salsas with this recipe!

Currycot™ Chicken Wings

Try this fantastic new flavor sensation with this exceptionally easy recipe! Party time or meal time, any time is right for these wings!

Prep: 15 minutes
Marinate: 4 hours or overnight
Bake: 30-35 minutes

Pour 1/2 cup Fischer & Wieser Currycot™ Indian Style Apricot Curry Sauce into a large resealable plastic bag; add chicken. Seal bag and turn to coat. Refrigerate for 4 hours or overnight. Refrigerate remaining Fischer & Wieser Currycot™ Indian Style Apricot Curry Sauce.

Drain and discard marinade. Place wings in a greased foil-lined 15-in. x 10-in. x 1-in. baking pan. Sprinkle with salt and pepper, if desired. Bake at 400° for 30-35 minutes or until juices run clear, turning and basting occasionally with remaining sauce. Serve with remaining Fischer & Wieser Currycot™ Indian Style Apricot Curry Sauce. Serves 6

Chicken Breasts with Whole Lemon & Fig Marmalade

This  flavor combination of figs (so nutritious!) and lemons is so light and delicate, it’s perfect for chicken. With only 2 main ingredients, this recipe couldn’t be easier!  Serve with a tossed salad and a side of rice, and you’ve got dinner!            

Prep Time:  5-10 minutes
Cook Time:  35 minutes

1-1/4 cup Fischer & Wieser Whole Lemon & Fig Marmalade
Non-stick cooking spray
4 boneless, skinless chicken breasts
salt and pepper to taste

Preheat oven to 350°. Spray baking dish with non-stick cooking spray. Arrange chicken breasts in baking dish; spoon Fischer & Wieser Whole Lemon & Fig Marmalade over breasts. Sprinkle with salt and pepper to taste. Bake for 35 minutes, basting frequently with more Fischer & Wieser Whole Lemon & Fig Marmalade.  Remove chicken from baking dish and place on warm platter. Pour cooking juices over chicken as sauce. Garnish with fresh parsley and lemon slices if desired. Serves 4

Sweet & Spicy Chicken

From Lynne Akiko, Honolulu, HI, 4th place winner in our 2010 Summer Grilling Recipe Contest.

Prep Time: 5 min
Marinate Time: 1 hour
Grill Time: 20-25 min

Mix Fischer & Wieser Apricot Orange Marmalade and Fischer & Wieser Spicy Garlic Steak & Grilling Sauce, cilantro, and salt in a mixing bowl. Marinate chicken breast in sauce for about an hour. Heat grill to medium. Grill chicken breasts until juices run clear, approximately 10 minutes per side, depending on thickness of chicken breasts. Serves 2

Chicken Quesadillas with Fischer & Wieser Artichoke & Olive Salsa

Quesadillas with artichokes and olives flavoring them are a little unusual–but great! Add guacamole on shredded lettuce and you’ve got yourself a great little light meal.

Prep Time: 10 minutes
Cook Time:  20 minutes

12 white corn tortillas
5 grilled or baked chicken breasts, sliced into thin slices
1 pound shredded Quesadilla cheese, or substitute Monterey Jack
2 cups Fischer & Wieser Artichoke & Olive Salsa
canola oil

Lay the corn tortillas on a baking sheet. Arrange some of the chicken slices on half of each tortilla. Scatter 1/3 cup of the shredded cheese over the chicken on each tortilla. Spoon some of the Fischer & Wieser Artichoke & Olive Salsa over the cheese. Fold the top of the tortillas over the filling. Heat a thin glaze of canola oil in a large skillet or flat griddle-grill. When oil is medium hot, cook the quesadillas until the cheese has melted and tortillas are slightly browned, turning once with a wide metal spatula. Smash the top of the tortilla to flatten slightly when turned. To serve, cut each quesadilla into two wedges. Arrange on a platter and serve hot with more Fischer & Wieser Artichoke & Olive Salsa on the side. Serves 6.

Whole Lemon Fig & Marmalade Chicken

Want a light and delicate entree that’s packed with the unique flavor combinations of figs (so nutritious!) and lemons? Try this—you’ll come
back to this recipe time and again.

Prep Time:  5-10 minutes
Cook Time:  35 minutes

1-1/4 cup Fischer & Wieser Whole Lemon & Fig Marmalade
1/4 cup water
Non-stick cooking spray
1/2 pound dried figs
10 lemon slices
4 boneless, skinless chicken breasts
Fajita seasoning or lemon pepper to taste
1 teaspoon dried parsley
1 tablespoon chopped fresh parsley

Preheat oven to 350°. In a small bowl, combine Fischer & Wieser Whole Lemon & Fig Marmalade and water; set aside. Place figs and 6 lemon slices in the bottom of a baking dish which has been sprayed with non-stick cooking spray. Arrange chicken breasts on top, then pour Fischer & Wieser Whole Lemon & Fig Marmalade and water mixture on top. Sprinkle with fajita seasoning or lemon pepper and dried parsley to taste. Bake for 35 minutes, basting frequently (turn figs if they begin to brown). With a slotted spoon, remove chicken, figs and lemon slices from baking dish and place on warm platter. Skim fat from cooking juices, then pour over chicken as sauce. Garnish with fresh parsley and more 4 lemon slices. Serves 4

Sweet, Sour & Smokey Mustard Hoagies

Need a great way to use up leftover ham or smoked turkey? These great hoagies fill the bill!

Prep time: 10-15 minutes
Broil time:  10 minutes

  • 4 hoagie buns, sliced lengthwise
  • 8 ounces ham or smoked turkey, thinly sliced
  • 1/4 cup Fischer & Wieser Sweet, Sour & Smokey Mustard Sauce
  • 4 slices Pepper Jack cheese
  • 1 small can sliced black olives
  • 1/4 cup diced green onion
  • 4 large leaves Romaine or Bibb lettuce
  • 1 tomato, thinly sliced

Set oven to broil (500 degrees F.) Place hoagies on baking sheet, buns open. Spread inside surfaces with Fischer & Wieser Sweet, Sour & Smokey Mustard Sauce. Layer ham or smoked turkey, black olives, green onions and cheese on buns; broil until cheese is melted, approximately 10 minutes. Add Romaine or Bibb lettuce leaves and tomato slices. Serves 4

Mixed Green Salad with Chicken and Raspberries

If you’re looking for a great “different” salad that provides massive nutrition and taste, try this one! You’ll get rave reviews.

  • 2 fully cooked (grilled) chicken breasts, diced
  • 4 to 6 cups washed mixed salad green
  • 1 cup fresh raspberries, rinsed and drained
  • 1 small can Mandarin oranges
  • 1 small red onion, sliced into rings
  • 1/3 cup chopped walnuts or pecans
  • 1 cup diced dried apricots
  • 1 to 1-1/2 cup Fischer & Wieser The Original Roasted Raspberry Vinaigrette
  • 1/4 to 1/3 cup crumbled feta cheese
  • garlic croutons

Toss all ingredients together except Fischer & Wieser The Original Roasted Raspberry Vinaigrette. Divide mixture into 6 serving dishes. Drizzle with Fischer & Wieser The Original Roasted Raspberry Vinaigrette. Top with feta cheese and garlic croutons. Serves 6.
