Spicy Sesame Stir Fry Chicken

Stir fry is just naturally quick and delicious—but this one is also tantalizing!

Prep Time:  15 minutes
Cook Time:  20 minutes

  • 3 tablespoons oil
  • 2 whole boneless, skinless chicken breasts, 3/8″ julienned
  • 2 stalks celery sliced diagonally
  • 1 red bell pepper julienned
  • 1 cup assorted mushrooms
  • 1 can water chestnuts sliced
  • 3 green onions sliced diagonally
  • 1 baby bok choy chopped in large pieces
  • 3/4 cup Fischer & Wieser Spicy Sesame Stir Fry & Dipping Sauce
  • 2 tablespoons black sesame seeds

Brown chicken in oil. Remove from pan. Add veggies and stir-fry for 2-3 minutes. Return chicken to pan and heat through. Add Fischer & Wieser Spicy Sesame Stir Fry & Dipping Sauce . Serve over rice. Serves 2

Chicken Quesadillas with Fischer & Wieser Queso Starter–Just Add Cheese

Pair these great quesadillas with a side of guacamole on shredded lettuce and you’ve got yourself a great little light meal.

Prep Time: 10 minutes
Cook Time:  20 minutes

Lay the tortillas on a baking sheet. Arrange some of the chicken slices on half of each tortilla. Scatter 1/3 cup of the shredded cheese over the chicken on each tortilla. Spoon some of the Fischer & Wieser Queso Starter—Just Add Cheese over all. Fold the top of the tortillas over the filling. Heat a thin glaze of canola oil in a large skillet or flat griddle-grill. When oil is medium hot, cook the quesadillas until the cheese has melted and tortillas are slightly browned, turning once with a wide metal spatula. Smash the top of the tortilla to flatten slightly when turned. To serve, cut each quesadilla into wedges. Arrange on a platter and serve hot with more Fischer & Wieser Queso Starter—Just Add Cheese on the side. Serves 6.

Charred Pineapple Chicken Shish Kebobs

This grilled chicken recipe combines sweet and sour, fruit and veggies with the lean protein healthy folks are looking for in today’s entrées.

Prep Time:  30 minutes
Marinate Time:  2 hours
Grill Time:  6 minutes

  • 1/2 cup teriyaki sauce
  • 2 limes, juiced
  • 2 cloves garlic, minced
  • 1 cup Fischer & Wieser Charred Pineapple Bourbon Sauce
  • 2 chicken breasts, cubed
  • 1 (8 ounce) package medium mushrooms, halved
  • 1 red bell pepper cut in 1-inch cubes
  • 2 small white onions
  • 1 green bell pepper, cut n 1-inch cubes
  • 2 small zucchini, cubed
  • 4 roma or plum tomatoes

Heat grill until charcoal is gray, or on medium heat. Mix the first four ingredients together thoroughly. Place mixture into a zip-styled food storage bag along with cubed chicken pieces. Let mixture marinate for 2 hours (overnight marinating is not recommended). Skewer chicken on kebobs, alternating with vegetables. Place on grill and cook for 6 minutes or until chicken is cooked completely. Flip every 3 minutes and baste with Fischer & Wieser Charred Pineapple Bourbon Sauce. Serves 4

Rockin’ Raspberry Creamed Chicken

This recipe idea was suggested to us by a loyal customer, Babs Zaner, in San Diego, who wanted to use our Fischer & Wieser Gourmet The Original Roasted Raspberry Chipotle Sauce® with heavy cream, over chicken. We tested it and think she has a winner!

Prep Time:  15-20 minutes
Cook Time:  2.5-3 hours

Preheat oven to 350 degrees F. Sprinkle breasts with fajita seasoning (or salt & pepper); dredge in panko (or bread) crumbs. Melt butter in heavy saucepan; add dredged breasts. Sauté until lightly browned. Meanwhile, mix the cream, Fischer & Wieser The Original Roasted Raspberry Chipotle Sauce®, and chicken broth together. Transfer chicken to baking dish. Pour cream mixture over chicken breasts. Bake in 350° oven for 45 minutes to 1 hour. Turn heat down to 200° and continue baking another 1-1/2 to 2 hours, until sauce is completely browned. Serves 4

Chicken or Beef Fajitas

Whether you use chicken, beef, or both, these fajitas are muy delicioso! They’re great eatin’, as well as great fun to grill while your friends are gathered round chompin’ at the bit for a taste!

Prep Time: 20 minutes
Marinade Time:  15 minutes
Grill Time:  15-20 minutes

    Chicken or Beef Fajitas  with Fischer & Wieser Gourmet Salsa a la Charra.

  • 1 2-pound beef skirt steak   or
  • 4 boneless, skinless chicken breasts
  • 2 packages mesquite marinade
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • Fajita Seasoning to taste
  • 16 flour or corn tortillas, as desired
  • 2 cups shredded iceberg, Romaine, or curly leaf lettuce
  • 1/2 purple onion, diced
  • 1 tomato, diced
  • 3/4 cup shredded Monterey Jack Cheese
  • 1/2 to 3/4 cup Fischer & Wieser  Salsa A La Charra Salsa
  • Garnishes:  guacamole, sour cream, black olives, sliced avocadoes

Prepare grill for cooking. Marinate skirt steak or chicken breasts in mesquite marinade mixed with water or vegetable oil, 15 minutes. Sprinkle with fajita seasoning to taste. Grill skirt steak until meat thermometer inserted in thickest part reaches 145° for 15 seconds; grill chicken breasts until meat thermometer inserted in thickest part reaches 165° for 15 seconds. When done, remove to cutting board and slice into 1/2″ slices. Heat tortillas on griddle or microwave (wrap in paper towel and heat 25 seconds or so, depending on your microwave). To serve, place warmed tortillas, lettuces, onion, tomato, cheese and Fischer & Wieser  Salsa A La Charra in serving containers. Allow guests to prepare their fajitas as they desire. Add garnishes as desired Serves 8

Jalapeach-Glazed Grilled Chicken

This luscious combination of grilled chicken with the caramelized Fischer & Wieser Jalapeno Peach Preserves is unbeatable! Combine with a great wine, and you have a tantalizingly sweet-hot entreé with which to delight your guests!

Prep Time:  5 minutes
Grill Time:  15-20 minutes

Prepare grill for cooking. Place seasoned chicken breasts over coals; allow to cook until internal temperature reaches 165º F. for 15 seconds, approximately 15 minutes. Brush chicken breasts with Fischer & Wieser Jalapeno Peach Preserves. Place over coals just until sauce is caramelized. Let sit a few minutes before serving to allow juices to redistribute. Serve with tossed salad and roasted potatoes. Serves 4

Raspberry Chipotle Turkey Sandwich

This sandwich takes leftover turkey from humdrum to WOW! Perks up parties and get-togethers, as well as everyday meals, any time of the year!

Prep Time:  10-15 minutes

Mix together mayonnaise and softened cream cheese; spread liberally on bread. Place 2-3 slices turkey on bread; top with 2-3 tablespoons Fischer & Wieser Gourmet The Original Roasted Raspberry Chipotle Sauce®. Top with lettuce or spinach.

Pomegranate & Mango Chipotle Hot Wings at Home

Want hot wings with an attitude you can fix at home? One taste of these and you’ll be crowing for more! The pomegranate and mango add just the right amount of sweet-tart, and then…there’s the chipotle! Yum!

Prep Time:  10-15 minutes
Cook Time:  25-30 minutes

Garnish:

  • 12-15 3-inch long celery sticks
  • 1 to 1-1/2 cups blue cheese dip

Preheat oven to 475°F. Oil rack of a broiler pan; arrange the wings, skin side up on broiler pan and bake them for 25 minutes.  Remove wings from oven; brush with the Fischer & Wieser Pomegranate & Mango Chipotle Sauce.  Return wings to oven and broil them about 4 inches from the heat for 1 to 2 minutes, or until they are crisp.  Serve on warm platter with celery sticks and blue cheese dip if desired. Serves 4

*May also use:  Fischer & Wieser  The Original Roasted Raspberry Chipotle Sauce® (1 cup mixed with 1/4 cup soy sauce) in place of Pomegranate & Mango Chipotle Sauce

Asparagus and Chicken Manicotti with Mom’s Garlic & Basil Spaghetti Sauce

Simple and quick to prepare, this one-dish meal will turn you into a gourmet chef before you know it! Your family will think they’re in an exclusive gourmet restaurant, sitting at your table. Serve with a green salad and Italian bread sticks to complete the menu.

Prep Time:  30-45 minutes
Cook Time:  40 minutes

  • 1/2 box (7) tubular (manicotti, cannelonni) pasta
  • 1-1/4 cup Ricotta cheese
  • 1 cup Mozarella cheese (shredded)
  • 1/4-1/3 cup Italian seasoned bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon garlic salt, as desired
  • 1/4 cup chopped parsley
  • 3 cups Mom’s Garlic & Basil Spaghetti Sauce
  • 8 spears fresh baby asparagus
  • 2 fully cooked Parmesean or Italian Seasoned Chicken Breasts

Carefully place pasta tubes a few at a time into 6 to 8 quarts of rapidly boiling salted water. Cook 8 to 10 minutes, stirring occasionally. DO NOT OVERCOOK. Drain. Allow to cool slightly. Combine Ricotta and shredded Mozarella cheeses, Italian bread crumbs, salt, minced garlic, garlic salt and chopped parsley. Pour half the Mom’s Garlic & Basil Spaghetti Sauce in 13″x 9″x 2″ rectangular baking dish. Stuff the cooked pasta with filling. Arrange stuffed pasta tubes on sauce. Steam asparagus 3-5 minutes in vegetable steamer. Thaw and warm fully cooked Parmesean or Italian Seasoned Chicken Breasts in microwave, 3-4 minutes. Dice chicken breasts. Place steamed asparagus and  diced chicken breasts over stuffed pasta tubes. Pour remaining Spaghetti Sauce over all. Sprinkle with additional mozzarella cheese the last 10 minutes of baking. Bake in 350 degree oven approximately 30 minutes.
Serves 4
Note:  Any of our Mom’s Pasta Sauces may be used with this recipe.
