Grilled Sirloin Shish Kebabs

Wow! This is a fabulous entreé that you’ll love getting your friends and family involved in preparing…they’ll all want the recipe after they try this sauce!

  • 1 to 1-1/2 pounds beef sirloin, cubed
  • 1 cup Fischer & Wieser The Original Roasted Raspberry Vinaigrette
  • 1/4 cup soy sauce
  • 1 green bell pepper, cut into 1″ x 1″ pieces
  • 1 red bell pepper, cut into 1″ x 1″ pieces
  • 1 medium onion, cut in half, then into wedges and separated
  • 2 cups sliced large mushrooms

Start coals in charcoal grill to allow to die down while preparing shish kebabs. Cut beef into cubes. Mix Fischer & Wieser The Original Roasted Raspberry Vinaigrette with soy sauce. Pour over beef cubes and marinate 20 to 30 minutes. Cut up vegetables. After beef has marinated the allotted time, thread beef & vegetables onto skewers (if using bamboo, soak in water while meat is marinating). When coals are ready, grill shish kebabs 12 to 15 minutes, or until beef juices run clear when pierced. Brush with marinade 2 to 3 times per side while grilling. Serve with rice, if desired. Serves 6.

Spicy Sesame Grilled Sirloin Shish Ka-Bobs

Tender, juicy and delicious-those will be just some of the adjectives your guests will use to describe these fantastic shish ka-bobs!

Marinate Time:  20-30 minutes
Prep Time:  25 minutes
Grill Time:  12-15 minutes

  • 1 to 1-1/2 pounds beef sirloin, cubed
  • 1 cup Fischer & Wieser Spicy Sesame Stir Fry & Dipping Sauce
  • 1 green bell pepper, cut into 1″ x 1″ pieces
  • 1 red bell pepper, cut into1″ x 1″ pieces

Grilled Portobello Mushrooms with Fischer & Wieser All Purpose Vegetable & Meat Marinade

This great dish can be used as a side dish (perfect with grilled steaks), as a substitute for meat, or slapped between a burger bun and served as a veggie burger with all the trimmings.

Prep Time:  5 minutes
Marinate Time:  1 – 8 hours
Grill Time:  5-8 minutes

Heat a gas char grill to medium hot. Carefully remove the stems from the mushrooms, taking care not to break the caps. Brush the mushrooms liberally on both sides with the Fischer & Wieser All Purpose Vegetable & Meat Marinade. Marinate for at least one hour, or refrigerate for up to 8 hours. Grill the mushrooms, turning once or twice, until they are slightly softened, about 5-8 minutes. Baste the mushrooms with remaining Fischer & Wieser All Purpose Vegetable & Meat Marinade while grilling. Serve hot. Serves 4. To broil, place marinated mushrooms in baking dish and place under broiler for approximately 5-8 minutes, turning once.

Grilled Texasburgers with Big Bold Red Soppin’ Sauce and Chipotle Chile Ketchup

Ready to get down to it when it comes to grillin’ burgers? Then Fischer & Wieser Big Bold Red Soppin’ Sauce and Fischer & Wieser Chipotle Chile Ketchup, are the best pair of products west of the Atlantic! Get ready for the “Yums” after you and your guests taste these burgers!!!

Prep Time: 30 minutes
Grill Time:  30 minutes

6 (6-ounce) burger patties
1 to 1-1/2 cups Fischer & Wieser Big Bold Red Soppin’ Sauce
freshly cracked black pepper and a dash of ground red pepper, to taste
6 slices asadero cheese
½ cup Fischer & Wieser Smokey Chile Chipotle Ketchup
6 good quality burger buns
melted butter
6-12 slices tomatoes
6-12 slices iceberg lettuce leaves
6-12 thinly sliced onions

Heat a grill to medium hot. Pour 1 cup of the Fischer & Wieser Big Bold Red Soppin’ Sauce in a baking dish. Place the burger patties in the sauce, turning to coat both sides well. Grill the burgers on the grill to desired degree of doneness, basting them with more Fischer & Wieser Big Bold Red Soppin’ Sauce each time you turn them. About 3-4 minutes before the burgers are done, place a slice of cheese on top of each burger. Open the buns and paint the insides with melted butter. Place buns, buttered sides down, on the grill rack; grill buns just long enough to lightly brown, with edges slightly crisp. Place a burger on each bun and pour some of the Fischer & Wieser Gourmet Smokey Chile Chipotle Ketchup on top. Layer on tomato slices and lettuce leaves. Serves 6

Smokehouse Bacon Grilled Burgers

If you want a bacon burger without having to fry bacon, these will do the trick!

Preheat gas char grill to medium heat. In a large bowl combine the ground chuck, black pepper, dehydrated onion and 1/4 cup of Fischer & Wieser Smokehouse Bacon & Chipotle Grilling Sauce. Using your hands, blend the mixture well, distributing ingredients thoroughly. Separate the meat mixture into 8 equal portions of 6 ounces each; pat meat into firm burgers. Place burgers on preheated grill and cook, basting with additional Fischer & Wieser Smokehouse Bacon & Chipotle Grilling Sauce each time you turn them, for about 8 minutes per side. To serve, assemble burgers with your favorite condiments. Serves 8

Charred Pineapple Chicken Shish Kebobs

This grilled chicken recipe combines sweet and sour, fruit and veggies with the lean protein healthy folks are looking for in today’s entrées.

Prep Time:  30 minutes
Marinate Time:  2 hours
Grill Time:  6 minutes

  • 1/2 cup teriyaki sauce
  • 2 limes, juiced
  • 2 cloves garlic, minced
  • 1 cup Fischer & Wieser Charred Pineapple Bourbon Sauce
  • 2 chicken breasts, cubed
  • 1 (8 ounce) package medium mushrooms, halved
  • 1 red bell pepper cut in 1-inch cubes
  • 2 small white onions
  • 1 green bell pepper, cut n 1-inch cubes
  • 2 small zucchini, cubed
  • 4 roma or plum tomatoes

Heat grill until charcoal is gray, or on medium heat. Mix the first four ingredients together thoroughly. Place mixture into a zip-styled food storage bag along with cubed chicken pieces. Let mixture marinate for 2 hours (overnight marinating is not recommended). Skewer chicken on kebobs, alternating with vegetables. Place on grill and cook for 6 minutes or until chicken is cooked completely. Flip every 3 minutes and baste with Fischer & Wieser Charred Pineapple Bourbon Sauce. Serves 4

Major Cleaton’s Bacon-Wrapped Stuffed Jalapenos

Wow! Great to do on the grill before the entreé is done, while your guests are wandering over to the grill to see how everything’s coming! The bacon sizzles and the Fischer & Wieser The Original Roasted Raspberry Chipotle Sauce® tantalizes! This is from our Major Cleaton* (see our blog).

Prep Time:  15 minutes
Grill Time:  10-15 minutes

Heat grill Cut washed peppers in half lengthwise; remove seeds. Mix cream cheese and Fischer & Wieser The Original Roasted Raspberry Chipotle Sauce® together (may need more or less raspberry chipotle, to taste). Fill pepper halves with cream cheese and raspberry chipotle mixture. Wrap bacon slices around stuffed peppers; secure with toothpick. Grill until bacon is done, 10-15 minutes, depending on thickness of bacon. Serves 6

“For the Jalapeños I was talking about, you take a nice big pepper, cut it in half lengthwise and seed it.  Mix up room temperature cream cheese and raspberry chipotle to taste.  Fill up the pepper halves.  Wrap the whole thing in Bacon and secure with a toothpick.  Grill till done. (The pepper cookers they sell in town are useless.  You have the end of the pepper hanging out the bottom next to the fire and the bacon above the contraption and it always ends up raw.  Cutting the Pepper lengthwise lets you get the bacon done evenly as you can flip it without the stuffing coming out).”

Jalapeach-Glazed Grilled Chicken

This luscious combination of grilled chicken with the caramelized Fischer & Wieser Jalapeno Peach Preserves is unbeatable! Combine with a great wine, and you have a tantalizingly sweet-hot entreé with which to delight your guests!

Prep Time:  5 minutes
Grill Time:  15-20 minutes

Prepare grill for cooking. Place seasoned chicken breasts over coals; allow to cook until internal temperature reaches 165º F. for 15 seconds, approximately 15 minutes. Brush chicken breasts with Fischer & Wieser Jalapeno Peach Preserves. Place over coals just until sauce is caramelized. Let sit a few minutes before serving to allow juices to redistribute. Serve with tossed salad and roasted potatoes. Serves 4

Grilled Shrimp-Sausage Ka-Bobs

DELICIOUS!! A great recipe for those football, Final Four or other sporting event parties! Or just for any time you’re having fun grilling and enjoying friends and family!

Prep Time:  25-30 minutes
Marinate Time:  15 minutes
Grill Time:  10-15 minutes

2-3 medium yellow squash, rinsed and sliced
1 medium onion, divided into petals
1 green bell pepper, cut into approximately 1/2″ x 1″ pieces
1 red bell pepper, cut into approximately 1/2″ x 1″ pieces
6-8 mushrooms, rinsed and sliced
1 link beef or pork sausage, sliced
1-1/2 lbs. medium shrimp, deveined
1-3/4 cups Fischer & Wieser Papaya Lime Serrano Sauce
1-3/4 cups Fischer & Wieser Mango Ginger Habanero Sauce
Skewers (if wooden, soak 15 minutes before threading).

Prepare squash, onion, bell pepper, red bell pepper, mushrooms, sausage, and shrimp as indicated; marinate shrimp in Papaya Lime Serrano Sauce (15 minutes). Thread all ingredients, alternating as desired, onto skewers. (Soak skewers in water, if bamboo, before using, while shrimp is marinating.) Heat grill until coals are grey; place threaded skewers over fire; brush with Mango Ginger Habanero Sauce. Cook until shrimp loses its pink color, and sausage sizzles, approximately 10 minutes. Serve hot over rice, if desired. Serves 9-12
