Italian Cubed Steaks

For an easy gourmet entree, try this slow-simmered Italian offering. Serve over pasta or rice, with a green salad and Italian bread, and you’ve got a marvelous organic gourmet treat! Delizioso!

Melt butter in skillet; add chopped onion, green pepper, sliced seasoned cube steaks. Saute until onions are translucent and steaks are browned, approximately 10 minutes. If desired, place a crock pot liner in large capacity crock pot; place browned steak, onions, peppers in liner. Pour Mom’s Organic Garlic & Basil Spaghetti Sauce over all, and set crock pot on low. Cook for 8 to 10 hours, until steak is very tender.

Alternatively, pour Mom’s Organic Garlic & Basil Spaghetti Sauce over ingredients in skillet. Bring to a boil and reduce heat to simmer. Add water 1/4 cup at a time as needed. Simmer 2 hours or until cube steak is tender.

Serve over pasta or rice. Serves 4

Easy Italian Sausage and Pepperoni Pizza

Round up the family and have a pizza-making party! These quick and easy pizzas are so delicious – and fast – that everyone will want to be in on the fun.
Prep Time:  10 minutes
Bake Time:  12-15 minutes

  • 1 (12-inch) Boboli Pizza Crust
  • 3/4 cup Mom’s Special Marinara
  • 2 cups (8 ounces) shredded mozzarella cheese
  • 1/2 cup thin-sliced onion
  • 3/4 cup thin-sliced green bell pepper
  • 1/2 cup sliced ripe olives
  • 3 ounces sliced pepperoni
  • 3 ounces bulk-style Italian sausage, cooked and crumbled
  • 1/4 cup grated Parmesan cheese

Preheat oven to 400 degrees. Place Boboli Pizza Crust on pizza pan. Spread the Mom’s Special Marinara over the crust. Scatter the mozzarella cheese over the sauce, then repeat with remaining ingredients, except Parmesan cheese. Bake the pizza in preheated oven for 12-15 minutes, or until cheese is melted and bubbly. Remove from oven and scatter the Parmesan cheese over the top of the pizza before slicing into eight wedges with pizza cutter or sharp knife. Serve hot. Makes 8 slices.

Mom’s Sausage and Pepper Hoagie

If you love hoagies, this Italian version is hard to beat! Mom’s Special Marinara Pasta Sauce gives these that extra special Italian flavor that’s savory, sumptuous, and satisfying!

Prep/Cook Time:  20-30 minutes

  • 1 pound fresh Italian sausage links, sweet (mild) or hot
  • 1/2 cup water
  • 1 tablespoon extra virgin olive oil
  • 1 medium green bell pepper, cut into thin strips
  • 1 medium red bell pepper, cut into thin strips
  • 1 large onion, sliced
  • 1/2 teaspoon dried oregano
  • 1/2 tablespoon chopped fresh basil
  • 1 cup Mom’s Special Marinara Pasta Sauce

Brown sausages, turning 2 or 3 times, in a large skillet on medium heat for 5-10 minutes. Add water and bring to a gentle simmer. Cover, reduce heat and continue simmering for 10 minutes. Drain sausages on paper towel. When cooled sufficiently, slice 1/4 to 1/2 inch thick. If no oil or liquid remains in skillet, add up to 1 tablespoon oil. Increase heat to medium-high and add bell peppers, onion, oregano and basil. Cook, stirring frequently, until vegetables are crisp-tender (about 5 minutes). Return sausage to skillet and add the Mom’s Special Marinara Pasta Sauce, then heat through.

To serve, hollow out bottoms of rolls and place sausage links in depression to fill. Top each with an equal amount of the vegetable and Mom’s Special Marinara Pasta Sauce and serve. Serves 4

Mom’s Limited Edition Tomato Basil Soup and Pasta

When you’re searching  for a really quick but tasty lunch or dinner entrée, try this! You’ll appreciate the creamy, comforting taste of Mom’s Limited Edition Tomato Basil Soup paired with meatballs and pasta.

Prep Time:  15 minutes
Cook Time: 20-30 minutes

Brown meatballs in extra virgin olive oil in skillet over medium-high heat. Drain. Pour Mom’s Limited Edition Tomato Basil Soup over meatballs in skillet. Allow to simmer 20-30 minutes. Linguine with Italian Sausage

This tasty entree’ couldn’t be easier. With Mom’s Spicy Arrabbiata added to Italian sausage and linguine, all you need to add is your favorite tossed salad and a sparkling glass of wine for the perfect repast.

Prep/Cook Time:  25-30 minutes

  • 1/2 pound Italian sausage links
  • 10 ounces linguine pasta
  • 1-1/2 cups Mom’s Spicy Arrabiata
  • grated Parmesan cheese

Preheat oven to 350° F. Place the sausage links on a baking sheet in a single layer. Bake in preheated oven for about 25 minutes (or until skin has turned completely brown). Place sausages on paper towels to drain, then slice into bite-sized pieces.

While sausage is baking, cook the pasta according to package directions, until al dente (cooked so as to be firm but not hard). Drain well. Heat the Mom’s Spicy Arrabbiata until hot. To serve, place a portion of the drained pasta on each serving plate. Ladle about one cup of the Mom’s Spicy Arrabiata over each serving of pasta. Arrange sliced sausage on each serving and scatter some of the grated Parmesan cheese over the top. Serve hot. Serves 6

Mom’s Limited Edition Tomato Basil Soup Shrimp & Rice Gumbo

Using this rich, creamy Mom’s Limited Edition Tomato Basil Soup in a gumbo recipe may be the best idea anybody’s ever had! Not only is it quick, it satisfies the “gimme a little comfort food” request made by your friends and family.

Prep Time:  15 minutes
Cook Time:  15 minutes

  • 1/2 medium onion, chopped
  • 2 cups frozen shrimp, cooked and chopped (may substitute sausage or chicken for the shrimp)
  • 2 tablespoons melted butter or extra virgin olive oil
  • 1 cup Mom’s Limited Edition Tomato Basil Soup
  • 1 teaspoon Cajun Seasoning, if desired
  • 2 cups cooked rice

Saute′ onion and shrimp (or sausage, chicken) in melted butter or olive oil. Add Mom’s Limited Edition Tomato Basil Soup and Cajun Seasoning. Bring to a boil; lower heat to simmer. Allow mixture to simmer 10 to 15 minutes. Cook rice according to package directions while meat and sauce are simmering. Serve Mom’s Limited Edition Tomato Basil Soup and seafood or meat sauce over rice. Serves 4

Asparagus and Chicken Manicotti with Mom’s Garlic & Basil Spaghetti Sauce

Simple and quick to prepare, this one-dish meal will turn you into a gourmet chef before you know it! Your family will think they’re in an exclusive gourmet restaurant, sitting at your table. Serve with a green salad and Italian bread sticks to complete the menu.

Prep Time:  30-45 minutes
Cook Time:  40 minutes

  • 1/2 box (7) tubular (manicotti, cannelonni) pasta
  • 1-1/4 cup Ricotta cheese
  • 1 cup Mozarella cheese (shredded)
  • 1/4-1/3 cup Italian seasoned bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon garlic salt, as desired
  • 1/4 cup chopped parsley
  • 3 cups Mom’s Garlic & Basil Spaghetti Sauce
  • 8 spears fresh baby asparagus
  • 2 fully cooked Parmesean or Italian Seasoned Chicken Breasts

Carefully place pasta tubes a few at a time into 6 to 8 quarts of rapidly boiling salted water. Cook 8 to 10 minutes, stirring occasionally. DO NOT OVERCOOK. Drain. Allow to cool slightly. Combine Ricotta and shredded Mozarella cheeses, Italian bread crumbs, salt, minced garlic, garlic salt and chopped parsley. Pour half the Mom’s Garlic & Basil Spaghetti Sauce in 13″x 9″x 2″ rectangular baking dish. Stuff the cooked pasta with filling. Arrange stuffed pasta tubes on sauce. Steam asparagus 3-5 minutes in vegetable steamer. Thaw and warm fully cooked Parmesean or Italian Seasoned Chicken Breasts in microwave, 3-4 minutes. Dice chicken breasts. Place steamed asparagus and  diced chicken breasts over stuffed pasta tubes. Pour remaining Spaghetti Sauce over all. Sprinkle with additional mozzarella cheese the last 10 minutes of baking. Bake in 350 degree oven approximately 30 minutes.

Mexitalian Chiligetti

This quick and easy casserole will disappear before your eyes! It truly is a melding of two cultures in an intriguing entreé.  Serve with bread sticks and a salad to complete this tantalizing Mexitalian creation!

Prep Time:  15-20 minutes
Bake Time:  45-60 minutes

  • 1 pound ground beef, browned and drained
  • 1/2 medium onion, chopped
  • 1 small package spaghetti
  • 1 can red beans
  • 4 cups Mom’s Spicy Arrabiata Pasta Sauce
  • 2 tablespoons Worcestershire Sauce
  • 1 cup water

Heat oven to 350°. Brown ground beef and onions in medium skillet; drain. Spray 13″ x 9″ rectangular casserole with non-stick cooking spray. Place 1 layer of ground beef & onion mixture, 1 layer of spaghetti, 1 layer of beans in casserole; repeat until all ingredients are used. Mix Mom’s Spicy Arrabiata Pasta Sauce, Worcestershire Sauce, and water together. Stir well. Pour over casserole ingredients. Bake in preheated oven 45-60 minutes, or until liquid is absorbed and spaghetti is done.

  • 4 fully cooked Parmesean Chicken Breasts

Carefully place pasta tubes a few at a time into 6 to 8 quarts of rapidly boiling salted water. Cook 8 to 10 minutes, stirring occasionally. DO NOT OVERCOOK. Drain. Allow to cool slightly.
