Mom’s Tomato Basil Soup with Mascarpone & Roasted Red Bell Pepper Garnish
Mom’s Tomato Basil Soup is wonderful heated right from the jar, but add a few bells and whistles and you have yourself a culinary masterpiece. This one is fancy enough to serve to company – and no one ever need know it came from a jar!
1 (32-ounce) jar Mom’s Tomato Basil Soup
4 heaping tablespoons Mascarpone cheese
1 roasted red bell pepper (from supermarket jar), cut into tiny dice
8 fresh basil leaves, cut into thin julienne strips
Shredded Romano cheese
Heat the soup in saucepan or microwave until hot. Ladle into four serving bowl. Place a tablespoon of the Mascarpone cheese in the center of each
serving. Scatter a portion of the roasted red pepper on the cheese, then garnish with a scattering of the julienned basil leaves and
Romano cheese. Serve hot. Serves four.
