Pork and Plum Chipotle Stir Fry

For a fantastic new twist on stir-fry, try this excellent entrée!

Prep Time:  20 minutes
Cook Time:  10 minutes

  • 12 ounces pork tenderloin, cut into 1-inch cubes
  • 2 tablespoons cornstarch
  • 3 tablespoons peanut oil
  • 4 large garlic cloves, peeled and smashed
  • 1 large onion, halved, then sliced into 1/2-inch thick slices
  • 1 large green bell pepper, cut into strips
  • 1/2 cup slivered bamboo shoots
  • 1/3 cup chicken stock
  • 1 (15.75-ounce) jar Fischer & Wieser Plum Chipotle Grilling Sauce
  • 2 cups cooked white rice

Toss the pork tenderloin cubes in a bowl with the cornstarch, coating all pieces of the pork well; set aside.  Heat the peanut oil in a wok over high heat.  When oil is very hot, toss in the smashed garlic cloves and stir fry until they are lightly browned.  Remove the garlic with a slotted spoon and discard.  Add the pork cubes to the hot oil and stir fry until they are seared on the outside, about 1-1/2 minutes.  Remove with slotted spoon and set aside.  Add the onion, bell pepper and bamboo shoots to the skillet and stir fry for 2 minutes, or until onion is slightly wilted and transparent.  Stir in the chicken stock and Fischer & Wieser Plum Chipotle Grilling Sauce, blending well.  Add the pork cubes back to the wok and cook for 2 minutes to finish cooking the pork.  Serve over hot rice.  Serves 4
