Roasted Blackberry Chipotle Cheesecake Bars
For a quick and easy, but delightful blackberry dessert, try this offering! You’ll LOVE the compliments!

Cook Time: 50 minutes
Shortbread Base:
- 6 tablespoons well-chilled unsalted butter, cut into 1/2 inch dice
- 2 cups all-purpose flour
- 1/2 cup firmly packed light brown sugar
- 1/2 teaspoon salt
Preheat oven to 350°. Place oven rack in middle position. Combine all ingredients for shortbread base in work bowl of food processor fitted with steel blade. Process just until mixture resembles coarse meal. Turn mixture out into a 13×9x2-inch baking pan; press evenly onto bottom of pan. Bake shortbread in preheated oven until golden brown, about 20 minutes.
Filling:
- 16 ounces cream cheese, softened
- 2 large eggs
- 3/4 cup sugar
- 3 teaspoons vanilla extract
- 3/4 cup Fischer & Wieser Roasted Blackberry Chipotle Sauce
- Shortbread Base (see recipe above)
While the shortbread is baking prepare filling. In work bowl of food processor fitted with steel blade, process cream cheese until very smooth. Add eggs, sugar and vanilla; process until smooth. Spread the Fischer & Wieser Roasted Blackberry Chipotle Sauce evenly over the hot shortbread, and then pour the cream cheese mixture over it. Return baking dish to oven and bake until lightly puffed, about 30 minutes. Place pan on wire rack and set aside until completely cooled. Score into 24 bars using a sharp knife. Cover with plastic wrap and chill completely before serving. Makes 24 bars.
