1-2 tablespoons plus 1/4 cup Extra Virgin Olive Oil
1 pound sliced mushrooms
1 red onion, sliced thinly
1/4 cup balsamic vinegar
1/4 cup Fischer & Wieser’s The Original Roasted Raspberry Chipotle Sauce®
4 cups fresh spinach leaves
Sauté mushrooms and onions in 1-2 tablespoons Extra Virgin Olive Oil until mushrooms are browned and onions begin to carmelize. Remove from heat and set aside to cool slightly. Mix together 1/4 cup Extra Virgin Olive Oil, balsamic vinegar, and Fischer & Wieser’s The Original Roasted Raspberry Chipotle Sauce®, blending well. Add mushrooms and onions to spinach leaves in salad bowl; drizzle olive oil-vinegar-Raspberry Chipotle mixture over salad, tossing gently. Serves 4

This great dish can be used as a side dish (perfect with grilled steaks), as a substitute for meat, or slapped between a burger bun and served as a veggie burger with all the trimmings.
Prep Time: 5 minutes
Marinate Time: 1 – 8 hours
Grill Time: 5-8 minutes
Heat a gas char grill to medium hot. Carefully remove the stems from the mushrooms, taking care not to break the caps. Brush the mushrooms liberally on both sides with the Fischer & Wieser All Purpose Vegetable & Meat Marinade. Marinate for at least one hour, or refrigerate for up to 8 hours. Grill the mushrooms, turning once or twice, until they are slightly softened, about 5-8 minutes. Baste the mushrooms with remaining Fischer & Wieser All Purpose Vegetable & Meat Marinade while grilling. Serve hot. Serves 4. To broil, place marinated mushrooms in baking dish and place under broiler for approximately 5-8 minutes, turning once.
